Salad with Roasted Butternut Squash

As soon as the weather gets colder I’m back in the kitchen more than I was all summer. I love all of the hearty soups and casseroles that are associated with fall, and over the years have chosen my favorites to make again and again. I mostly find them on Pinterest by searching for the best fall recipes that incorporate ingredients I already have or am craving. They rarely disappoint! Today I’ve rounded up six of my favorite recipes that I associated with fall and wouldn’t hesitate to recommend to someone else. I started with a salad with roasted butternut squash that I amended from the original recipe. In my recipe, I had even more roasted vegetables including onions and garlic. You can add on whatever ingredients you want, that’s the beauty of a salad!

All You Can Eat Cabbage Soup

I had leftover cabbage on one occasion last year and had no clue how to use it up. Turning to the Internet, I found this soup that sounded promising – and healthy. It was delicious and tastes like stuffed cabbage.

Country Apple Fritter Bread

Mmmmm…I couldn’t resist adding an apple recipe in a fall recipe round up! I’d had this one pinned for years and finally got around to baking it after our trip to the apple orchard this year. It didn’t disappoint!

Mexican Spaghetti Squash Boats (Photo by Honey & Spiced)

This was the recipe I was most hesitant about, but I’ll try anything in a squash once. It was so much more delicious than I’d expected! I encourage you to try it, too.

Revisiting this recipe reminds me that I need to start using my Crock-Pot more! I’ve made this in years past and love it. My favorite part is that you can use whatever vegetables you like and have in the house – you don’t have to stick to the recipe.

And finally, a favorite easy-to-make but seems-so-fancy recipe. Steve and I use the “Cravings” cookbook sweet potato gnocchi recipe, but I found this one that’s really similar. I was intimidated by homemade gnocchi at first, but amazed at how easy it is.
