During the holidays I’m never shy to indulge in some season-specific treats. Yes, the first thing that comes to mind is cookies and other goodies that are synonymous with Christmas, but I actually also always think of my childhood best friend’s favorite Christmas treat. Her family loved peppermint stick ice cream, and since it was a seasonal item they had to wait all year to be able to enjoy it. I remember how excited they were when it’d hit shelves and they’d stock up their freezer! So this year, when I was reached out to about trying the limited edition Hudsonville Peppermint Stick ice cream, I immediately accepted and was transported back to childhood.

I couldn’t hold myself back from tasting it as soon as it arrived. Of course I could have just had the ice cream in a bowl, but I’m a HUGE fan of peppermint so I wanted to add more. It struck me I could dip cones in melted chocolate and roll them in crushed candy canes for an extra delicious treat. It was super easy to create and created a really nice presentation of the peppermint ice cream that would be great for get-togethers (or just to up your after-dinner dessert).

If you’re creating this easy recipe, after rolling the cones in melted chocolate, make sure to put the cones on wax paper so you can easily peel them off once the chocolate has hardened. Stick them in the refrigerator for about 10 minutes so that they’re ready to serve quickly.
