Cast Iron Skillet Recipe

cast iron skillet recipes

As soon as Steve and I started putting together our wedding registry I began dreaming about all of the new kitchen utensils and appliances I could add. I used to be a big cook (in fact it’s my goal for age 30 to get back into the hobby), and there are kitchen items I always felt like I was missing. One being a cast iron skillet. Never mind that I could only think of a few cast iron skillet recipes to try, I just assumed owning a cast iron skillet would open a world of possibilities. And oh, how it has.

After unboxing the skillet, I logged on Pinterest to browse recipe options using this pan. And wow, beyond all of the food I knew I could make in the oven, there’s a lot for the stove top, too! In fact, I started with a recipe that wasn’t even on my radar. This one pot enchilada recipe from She Likes Food turned out to be so good that I made it two weeks in a row, and packed the dinner leftovers for lunch. The recipe is vegetarian. Although I eat meat, I actually that it excluded it because the flavor was delicious and I knew I was getting so many good nutrients from squash, peppers, zucchini, etc., If you preferred, you could easily add chicken or ground meat to the pan.

Try this recipe if you want an easy summer night dinner. If you’re also looking for a cast iron skillet, here is the one we put on our registry. I’m pinning more and more cast iron skillet recipes, so be sure to follow my Pinterest board to find some to try yourself. I’ll be back later this week to share more of the kitchen items and beyond that we added to and just loved from our registry.
