Chicken Dinner for Two

I talk a lot about Steve’s and my relationship and how it’s changed since our wedding, but one thing I haven’t mentioned are how we cook for each other as a married couple. Frankly, because weeknight dinner isn’t together. Whenever I tell friends this they’re shocked. How could we live together and not make dinners for each other?! The fact of the matter is that Steve is a verrrry picky eater. I won’t go into his specific meal routine in this post (but I will definitely share it at a later time – it’s almost comical). All you need to know is that Steve eats the same thing every.single.night. And it’s always a single-serving chicken breast. So typically the only way for me to get him to switch up his meal and enjoy dinner with me is when we can compromise, and that usually still involves chicken. Thankfully, our apartment building is actually attached to a Jewel-Osco and we found a quick and delicious meal that we both agree on. Even better – no one has to do the cooking!

I’ve turned Steve on to the deliciousness of rotisserie chickens through Jewel signature meal deals. We both agree on the main course (chicken), and then can split the options of sides as well as pick out a beverage to pair with it. Now that it’s summer, I love to serve the meal with a refreshing glass of Gold Peak® Diet Tea. It’s like a sweet tea but without all of the added sugar. Eating our rotisserie chicken together reminds me of dinners I used to have with my family when we just needed something on the table that was quick, and inexpensive. Best of all, it can usually stretch to be a few meals and repurposed into other recipes, one of which I share at the end of this post.

Rotisserie Chicken Recipe

As mentioned, there’s no way Steve and I can finish an entire Jewel signature meal deal. I feel like we really get our money’s worth with it, because I like to find other recipes in which I can incorporate the leftover chicken. One of my favorite things to make is the Hungry Girl Healthy Waldorf Chicken Salad. I get to avoid boiling the chicken, and instead skip right to shredding it and mixing it with yogurt, mayo and whatever else you enjoy in a chicken salad. Keep reading to see what I add.

Here are the ingredients I use to make a healthy chicken salad, tasting as I go:

  • Low fat plain Greek yogurt
  • Low fat mayonnaise
  • Grapes, halved
  • Pecans, chopped
  • Celery, diced
  • Cucumbers, diced
  • Apples, diced
  • 1 packet Splenda
  • Lemon pepper

The amount of dressing you make will vary depending on how much chicken you have left over, but start by mixing 2 parts yogurt for every 1 part mayonnaise, and sprinkle in Splenda and lemon pepper. Stir in shredded chicken and remaining ingredients. Place it in a Tupperware with a bed of lettuce and you have lunch for tomorrow! You should definitely try it next time you still have meat on the bone of a rotisserie chicken.

    I love picking up a rotisserie chicken, it’s so easy! I’ve learned to take off all the chicken right away and it’s great. I love the reference to Steve’s diet! hahah
