As soon as Steve and I started putting together our wedding registry I began dreaming about all of the new kitchen utensils and appliances I could add. I used to be a big cook (in fact it’s my goal for age 30 to get back into the hobby), and there are kitchen items I always felt like I was missing. One being a cast iron skillet. Never mind that I could only think of a few cast iron skillet recipes to try, I just assumed owning a cast iron skillet would open a world of possibilities. And oh, how it has.

After unboxing the skillet, I logged on Pinterest to browse recipe options using this pan. And wow, beyond all of the food I knew I could make in the oven, there’s a lot for the stove top, too! In fact, I started with a recipe that wasn’t even on my radar. This one pot enchilada recipe from She Likes Food turned out to be so good that I made it two weeks in a row, and packed the dinner leftovers for lunch. The recipe is vegetarian. Although I eat meat, I actually that it excluded it because the flavor was delicious and I knew I was getting so many good nutrients from squash, peppers, zucchini, etc., If you preferred, you could easily add chicken or ground meat to the pan.

    I have a similar cast iron skillet at home that I love using! I want to grab a smaller size like 8″ I have a 12″ one right now. If you like tacos and tater tots, you should make tater tot pizza!
